Dinghy Sailing is a great way to get into sailing.  Its generally quick and cheap and more importantly you get very hands on experence of sailing a boat yourself without any of the issues of a bigger boat.  You can launch them usually yourself and learn to steer them very quickly. 

There are great RYA courses that you can get involved with which will teach you all the skills required.  Equally, there are a great number of sailing schools offering customised courses depending on what you would like to learn.
